A sunny potato salad
ingredients for 4 servings (cost about 2,5 € pp)
- Salt
- 800 g non starchy potatoes, peeled and cut in thick slices
- EV sunflower oil for greasing
- 12 black olives, pitted and cut in thick pieces
- 1 tbsp cappers
- 20 small cherry tomatoes
- 1 small onion, cut in thin slices
- 30 ml lemon juice
- 150 ml EV olive oil
- Coarse black pepper
- Fresh oregano
- ½ lemon confit, cut in small pieces
This is my favorite potato salad, I make it very often, especially during the summer. I love the potatoes to be hot and extra tasty, so I first boil them in salted boiling water and then dry them and roast them, well oiled, in ventilation oven at 220o C, till crispy.
Meanwhile, i confit the onion in olive oil, I take out the pit and cut the olives in pieces, I wait for the cappers to desalt, I prepare the simple vinaigrette and I roast the cherry tomatoes.
When everything ready, I put the potatoes in the plate with the lemon vinaigrette and then the onions, the cherry tomatoes (5 in each plate), the cappers, the lemon confit pieces and the olives.
If we don´t have a lemon confit, we cut half lemon in 2-3 slices and we salt them well. We leave the lemon slices for half an hour to extract as much juice is possible, and then we pat dry and cut the lemon in pieces.
I finish with fresh oregano and coarse black pepper.
