An example of how we can create impressive dishes with simple, everyday ingredients!
ingredients for 4 servings (cost about 3 € pp)
- 1 medium to large eggplant per person
- 1/2 mozzarella per person
- 1/2 roasted tomato per person
- 2 teaspoonful parmigiano cheese per person
- EV sunflower oil
- EV olive oil
- Large fresh basil leaves
- Salt
The eggplant is a very versatile vegetable. And very popular in the Southern Europe, where they prepare the eggplants in many ways.
First of all we have to roast two large tomatoes for about 45 minutes. Then we take off the skin and we cut them in pieces. We keep the solid peaces. We also cut the mozzarella in bites. We keep aside.
Then we take an eggplant and we cut it in very thin slices, making 12 slices without the edge. We pre-salt the eggplants and put them in a colander for 30 minutes.
Passed that time we pat them dry very well, I repeat, VERY WELL and we fry them in sunflower oil in batches, taking care not to burn them. For that reason the temperature of the oil should be lower than usual (170oC). We pat dry and set aside.
We preheat our oven to 180oC. We start building a tower alternating eggplant slice, parmigiano, tomato, salt, mozzarella and pepper and we finish with sauce and olive oil. We put it in the oven, waiting just for the mozzarella to melt.
We plate the towers and when they have already become less hot we fill in with the basil leaves.
