A fantastic side dish for a grilled fish
ingredients for 4 servings (cost about 2€ pp)
- 3 yellow peppers
- 3 orange peppers
- Salt
- 2 large or 4 small fennels bulbs and leaves
- 2 fresh garlic bulbs or 4 garlic cloves
- EV olive oil
- 10 drops of lemon
- Coarse black pepper
Grilling a large fish will always be special. A seabream, a dentex, a grouper or even a piece of salmon grilled on good quality charcoals could be a GREAT, MONUMENTAL dish.
But we also have to care not only about the fish but also for the side dishes.

– What? Do you wanna pair a splendid grilled fish with french fries? That seems to me like adding coke to a 12 years old single malt whiskey!!!!!
Fennels are the perfect pairing for fish, but they also need one more ingredient to build a hearty side dish. What better than peppers?
So, we wash, we trim (removing also the seeds) and we cut in pieces the peppers and we wash, we discard the exterior parts and we cut in thin slices the fennel bulbs. We also peel and cut the garlic in slices.
We preheat the oven at 170 Celsius degrees.
In a big baking pan we add peppers, fennel bulbs, garlic, olive oil and salt, we instantly mix and we put the pan in the oven, covering it slightly with a sheet of aluminium which must not be in touch with the food.
We bake for 45 to 60 minutes, till vegetables are very tender, we remove the aluminium foil, we raise the heat to maximum and we bake them for 5 more minutes.
We add chopped fennel leaves, black pepper and some lemon drops and we serve.
