fried egg with bread crumbs and ham

How to get happy with a piece of stale bread!


ingredients for 4 servings (cost about 2 € pp)
  • 50 g stale bread per person
  • An egg per person (better organic)
  • A slice jamón serrano per person
  • EV sunflower oil
  • Salt
  • Pepper
  • Fresh thyme

Migas (bread crumbs) are very common in Spanish cuisine. The bread for migas better be stale, because this way its internal humidity is equally distributed. But don’t bother, even with same day bread we can easily prepare migas.

We just have to discard the crust of the bread and to cut the crumb in small pieces with a knife. These pieces have to be relatively uneven, in order to achieve many textures (more or less crunchy) in every dish.

After cutting the crumb we fry it in a little amount of EV sunflower oil till golden. Take the fucking care when you fry and don´t play with your……….phone. Just a few seconds of attention and that´ s all.

We put aside the migas and we pass for 5 seconds one slice of jamón from the pan. YES! YOUR READ CORRECTLY! FOR 5 SECONDS, NOT MORE! We just want the jamón fat to be slightly softened and not to be melted and lost in the pan.

Well after that, we put a very generous amount of EV sunflower oil in a very small pan and when the oil gets hot, we drop (carefully) the eggs inside, one at a time of course. Salt and pepper as usual. The fried eggs have to be crunchy outside and liquid at the yolks.

I advise you to complete the dish with some fresh herbs. If you wanna use dry herb, it´s better to go and eat out!
