dry rice (paella) with shrimps, squid tentacles and date mussels

A luxury dish for special moments


ingredients for 4 servings (cost about 7 € pp)
  • 12 medium shrimps
  • the tentacles from one large squid
  • 10 date mussels
  • 200 g bomba or redondo rice
  • A small glass white wine
  • 600 ml fish stock
  • Already made sofregit, otherwise: a) 1 large or 2 medium onions, b) EV olive oil c) 1 tomato
  • Salt
  • EV olive oil
  • Parsley
  • lemon zest
  • allioli sauce (optional)

Having well learned the procedure for every paella we start preparing today´s dish.

In a large pot we bring to boil plenty of salted water. We add the squid tentacles and we boil them for at least 45 minutes till very tender.

We remove them and we add the shrimps. We boil them for 3 minutes. We remove them and we add the date mussels just till they open, not more. We keep all these things warm.

We proceed as shown before and when the 80% of the stock will have been absorbed we add the seafood and we put in the oven for 5 minutes.

We sprinkle with chopped parsley and lemon zest and we serve.
