A luxury dish for special moments
ingredienti per 4 porzioni (costo circa 7 € pp)
- 12 medium shrimps
- the tentacles from one large squid
- 10 date mussels
- 200 g di riso bomba o redondo
- Un bicchierino di vino bianco
- 600 ml di brodo di pesce
- Soffritto spagnolo altrimenti: a) 1 cipolla grande o 2 medie, b) olio extravergine di oliva c) 1 polpa di un pomodoro

- Olio d´ oliva EV
- Prezzemolo
- scorza di limone
- salsa all´ aglio (facoltativa)

Dopo aver appreso bene il procedimento per ogni paella, iniziamo a preparare il piatto di oggi.
In a large pot we bring to boil plenty of salted water. We add the squid tentacles and we boil them for at least 45 minutes till very tender.
We remove them and we add the shrimps. We boil them for 3 minutes. We remove them and we add the date mussels just till they open, not more. We keep all these things warm.
We proceed as shown before and when the 80% of the stock will have been absorbed we add the seafood and we put in the oven for 5 minutes.
We sprinkle with chopped parsley and lemon zest and we serve.
