You will adore the piadinas, it’s a matter of time to prepare your own!
ingredients for 4 piadine (cost about 1,5 € pp)
- 200 g soft wheat flour
- 35 g hard wheat flour
- 35 g whole wheat flour
- 3 g dried yeast
- 30 ml EV olive oil (or even better animal fat)
- 50 ml lukewarm soda
- 50 ml lukewarm milk
- 1/2 teaspoonful sugar
- 1/2 teaspoonful salt
- 1 red pepper
- 1 fresh tomato not very ripe
- 1 medium onion
- 8 black olives
- EV olive oil for drizzling
- Fresh oregano
The piadinas are pies, made in central Italy, with flour, water and animal fat or olive oil. The homemade ones are marvellous but also the confectioned are acceptable, the organic ones even more.
It is not difficult to prepare our own piadinas and have them in the fridge, ready for a fast meal. Piadinas can be conserved in perfect condition, air tight sealed for at least 10 days.
We first of all dissolve the yeast and the sugar in the lukewarm liquids (milk and water). We also mix the salt with the flours.
In a mixer bowl we add the (salted) flours and the liquids. We start kneading for 2 minutes using low to medium speed. We add the oil and we continue kneading for 2 minutes more.
We transfer the dough to a dusted bowl, we cover it with cling film and we let it rest and mature for 2 hours, better more.

We deflate the dough and we cut it in 4 equal pieces, each one must weigh about 100 g. With a dough roller we start rolling the piadinas in order to form round sheets equals to our pan. (we have to use a pan with about 28-30 cm diameter). We can cut the sheets with a large ring as I did.
We bring to heat the pan, lightly greased with oil and using medium to high heat we bake it for about 90 seconds on each side.
Our piadinas are ready. So easy. We can now fill them (this is the most common way but we are going to do it shortly) or use them like a thin “pizza” dough to prepare a fast pan snack.
So, first of all we cut the pepper and the tomato in slices, discarding seeds and jelly. We also peel and cut on slices the onion, we pit (WE NEVER BUY PRE PITTED OLIVES) the olives and we cut them in halves.
We put on each piadina pieces of pepper, tomato, olives and onion and we put the pan in a preheated oven at 200o C. We repeat the procedure with the rest piadinas.
When the piadinas turn crispy, we remove them from the oven, we drizzle them with some oil, we add fresh oregano and we serve, as hot as possible.
