broccoli with dried apricots and almonds

ingredients for 4 servings (cost about 2 € pp)
  • 2 medium broccoli (1 for every 2 persons)
  • 4 dried apricots
  • 10 almonds
  • EV Sunflower oil
  • Paprika de la Vera
  • Garlic oil
  • salt

We peel the almonds, we cut them in slightly uneven pieces with the knife and we roast them, till pale. We cut the apricots in very small dices. If they are relatively fresh we can leave them raw, otherwise we have to soak in lukewarm water for half an hour.

We wash and cut in pieces the broccoli, and put them into very salty boiling water for about 2 min. We want them to remain al dente.

We drain well the broccoli and we brown them in a wok with a spoonful of EV Sunflower oil, stirring RARELY. If we stir often, the broccoli will lose their shape.

When ready, we turn off the heat and we add the garlic oil, the almonds and the apricots.

We plate the broccoli, decorating them with paprika, some almonds and dried apricots.
