yellow foot mushrooms with small shrimps

The combination of mushrooms and seafood is fantastic

  • 200 g yellow foot mushrooms

You probably already have seen on our site a “mar i muntanya” dish, that means a dish made with seafood and meat. But in Spain, it is also well known the “mar i terra”, the combination of a vegetable or other vegetal ingredient with seafood. Today´s dish is a classic mar i terra, it is too easy to prepare and very, very, very tasty.

Wild mushrooms. What a product!!!!!! They need just some minutes to be prepared and they can be combined with almost everything.

So, In a pot of very hot salted water we boil the small shrimps in two batches for 3 minutes. We drain them and keep them aside.

We add some EV sunflower oil and we gently fry the onion. We remove it when tender, we raise the temperature to high and we sauté the mushrooms for about 3 to 4 minutes. We salt them the very last time.

I forgot to tell you that we must have cleaned very carefully the yellow foot mushrooms and also cut and remove their lower part.

We add the shrimps and the onions and we sauté for one more minute.

We garnish with some chopped parsley and we serve.
