green beans with roasted tomato and crunchy strips of leek

Enough with the brown colored and melted beans! Vegetables can be made in modern ways and always remain green!

  • 400 g very fresh and tender green beans
  • 1 large or two small tomatoes, already roasted and peeled
  • The white part 1 large leek
  • A garlic clove
  • A very small amount of flour
  • Extra virgin sunflower oil for frying
  • Extra virgin olive oil for drizzling

A healthy vegetarian dish ideal for the fresh autumn green beans!

We clean well the green beans. If needed, we also discard the fibers. If the beans are not very fresh we put them in cold water to revitalize them.

We bring to boil plenty of extra salted (4 teaspoonfuls per liter) water and we add the green beans. Usually 3 minutes will be enough.

We have in mind that the green beans, after 7 minutes of boiling, will begin to loose their color, so if the water is too acidic, add a little soda to reduce the time.

Meanwhile, we cut and sauté the peeled and already roasted tomatoes for a minute.

We cut the leek in thin strips, we pass it from the flour and we fry it in the sunflower oil just for seconds. Take care cos they can be burned very easily.

So, almost ready. Just plate the green beans, drizzle them with the best quality olive oil you have, put some pieces of tomato over them and finish the dish with the crunchy strips of leek.
