pil pil potatoes with “burnt” garlic

A very healthy and impressive plate with a sauce made by the proteins of the cod skin!

  • 4 potatoes, not waxy
  • Olio di semi di girasole EV
  • 4 large garlic cloves
  • Skin from salted cod
  • 12 cappers

A decent dish should be healthy. And healthy is not the dish that has no salt or fat, but the one made from NATURAL ingredients, without chemical additives!

We put the cappers in plenty of fresh water, in order to help discard the salty and acidic substances.

We wash, peel and cut the potatoes in 1 cm thick slices.

Starting from cold salty water (2 teaspoon salt per liter) we gently boil the potatoes until tender.

Meanwhile, we cut in slices (not too thin) the garlic and we fry it VERY GENTLY in oil. The garlic has to turn to a pale light brown color, but not to get over fried and to turn dark brown. We remove the garlic cloves.

In the same oil we gently fry the skin from the salted cod, moving continuously the pan in order to mix the wet proteins of the skin with the oil. After some minutes we remove the skin and with a whisk we start mixing the liquid trying to create a white thick sauce. Finally, we salt the sauce.

We plate the potatoes with the sauce, decorating them with “browned” garlic, cappers, the sauce and some minced parsley.
