A healthy, quick and cheap dish for the summer nights! You can substitute the garlic oil, with a good EV olive oil, but the result will not be the same. Stop being afraid the garlic, garlic is life, garlic is taste, garlic is made by God, garlic is, I know ……….. awful breath!

- A bunch of swiss chards per person

- 1/4 large or 1/2 of a small red pepper per person
- 3 medium boiled shrimps per person
- Olio d´ oliva EV
- 2 tbsp garlic oil per person
- De la Vera smoked paprika
I propose to our readers to add a little portion of protein in their vegetable dishes, making them more hearty and tasty. Having in the freezer already cooked shrimps, we can prepare in minutes dishes like this ridiculously easy and cheap recipe!
First of all we boil 4 liters of water and we add 5 tablespoons of salt.
We discard the stem parts of the chards and we cut the leaves in halves.
Meanwhile we cut the peppers in slices and we fry them in a pan with a spoonful of oil. When ready we add some paprika De la vera. We set aside.
Then we boil the chards for half minute, not more – we want them to keep their original shape. We drain the chards and we put in the hot water the shrimps, just to make them hot. We peel one shrimp per person and we cut its flesh in pieces. We keep the rest of the shrimps un-peeled.
In a wok we put a tablespoon of oil and we sauté the chards with the shrimp pieces. We add the garlic oil and we then plate the chards.
We put the whole shrimps in the hot wok for 1 min WITHOUT STIRRING, we just want the shrimp shells to be coloured.
We put the peppers and the shrimps over the chards and we serve.
