One of the most luxurious pasta dishes we can prepare for our special moments.

- 200 g porcini mushrooms

- 2 spicchi d´ aglio
- 40 g di burro
- parmigiano reggiano cheese
- pepe nero macinato

Let´s return at today´s dish. Porcino is the ………. president of mushrooms. It has a superior, unique texture and great, precious aromas.
We start from it, presidents always have priority. We clean porcini very well with a dump cloth or kitchen paper, we remove their dirty bottoms, and we cut them in pieces. We preheat very well a pan with a little bit of EV sunflower oil and we sauté them for about 4 to 5 minutes till tender. To achieve this result we have to continuously move the sauté pan in order to create an homogeneous cooking. We salt them at the very last moment of sautéing. We also add some black pepper.
In a cold pan with butter we add the garlic cloves whole. We put to heat and we gently fry them till golden. We then discard the solid parts of the garlic.
Meanwhile we bring to boil a pot with salted water and we add the spaghetti.
When the pasta is ready (1 minute less than al dente of course) we add it in the pan along with the garlic scented butter to mantecare, adding some boiling water from the pot, till we create a creamy sauce. We remove from the heat and we add some parmesan, stirring continuously. The last time we add the porcini.
We put in plates adding some extra parmesan cheese and we serve.
