I have not made a mistake. This beautiful and healthy everyday dish has a ridiculous cost!
ingredients for 4 servings (cost about 0,5 € pp)
- 1 liter chicken stock, better with no aromatics
- 200 g already cooked chickpeas (not canned, of course)
- ½ small red pepper and ½ carrot, both peeled and lightly roasted
- Olio d´ oliva EV
- Sale
- Rosemary
This soup is one of my beloved. Basically, this soup is a classic Greek dish, but dignified and well prepared!
The trick of this preparation is to lightly break the chickpeas, which have to be very very tender, in order to make them even more tender and easier to swallow them.
The other crucial point is the tenderness of the roasted vegetables. We just want some maillard aromas from them, but without sacrifying the tender texture. So, after roasting them we can put them in the stock for a while, to rehydrate them (this preparation, as all simple ones, needs attention to be perfect).
Apart from these two important points, the rest of the dish is very easy.
We boil the stock, we add salt and we check if is ok. Then we plate the stock, adding the chickpeas and some carrots and peppers pieces.
We decorate with rosemary and olive oil. 2-3 lemon drops would be a great idea.
