broccoli cream with black trumpets

Green and black colors will fill a white deep dish creating a healthy, hearty and gourmet soup, which can be made in less than half an hour!

  • 1,2 liter chicken stock
  • 300 g di broccoli
  • 50 g dried black trumpets

Another ridiculously easy to prepare soup, a way to avoid paying just to eat cold, soggy dishes, like the delivery junk, which makes us sick!

So, first of all we revitalize the trumpets, putting them in hot water.

We clean and cut in pieces the broccoli and we put them in the stock to be cooked. When completely soft (as we want to turn them into a “cream”), we let them cool for a while and we put them in a blender, HAVING OUR DAMNED ATTENTION, not to get burned.

We check the saltiness (we have to do that job many times during each preparation) and the acidity, and we boil the mixture, till achieving a thick creamy texture.

We also have the possibility to bind the soup with roux or beurre manié, but I don´t see why.

We plate, adding the black mushrooms on top.
