zucchini noodles with burnt garlic and fresh hot pepper

Neither burger, nor souvlaki. 5 minutes are enough for a cheap and healthy dish


ingredients for 4 servings (cost about 1 € pp)
  • 4 medium yellow zucchini
  • Salt
  • EV olive oil (of very gentle taste)
  • 4 medium fresh hot pepper
  • 8 garlic cloves

Contemporary life is awful. People do not have enough time to cook, to eat, to drink, to fuck, to sleep, to do whatever they like. Everything is happening in fast forward. With rush and anxiety. In an ideal world everything should be different but reality is hard and man has to be adapted to it.

Democratic Gourmet promotes as culture a healthy way of life, so it would be absolutely contradictory to what we stand for, if we suggest eating the rubbish of fast foods.

So, we have to make some proposals for very rapid dishes, aiming to convince you that there is an alternative to dirty burgers and souvlakis (there are also “clean” ones). Today’s dish covers exactly this purpose, as it can be prepared in 10 minutes. Yes, 10 minutes.

First of all, we have to prepare the “burnt” garlic. We cut the garlic cloves in slices (not too thin), and we put them in a cold pan with olive oil. We fry them in low heat till golden, but not brown. We remove the solid garlics and in the same oil we fry the spicy peppers.

Meanwhile, we boil 1 litre of salted water and with a spiralizer we make noodles from the zucchini. It is a matter of seconds. If you cannot find yellow zucchini you can use green ones, but in this case you better a red hot chili pepper, instead of a green (-No, I don´t never wanna feel, like I did that day).

When the water is ready we add the zucchini and we let them boil for 30 seconds, I repeat seconds. We pat dry and we pour over the garlic oil.

We serve in plates and we decorate with burnt garlic and spicy pepper.
