rice pudding with rose water and rose petals

ingredients for 4 servings (cost about 2 € pp)
  • 1 liter milk
  • a pinch salt
  • 120 g rice (1st option bomba or round rice, 2nd option carnarolli rice)
  • 100 g granulated sugar
  • 120 ml rosewater (60ml + 60 ml for drizzling)
  • A handful dried rose petals

I had many years to prepare rice pudding and in fact it was erased from my memory. Until I realized, that the rice pudding can be a magnificent dessert. Since that day, I’ve made rice pudding dozens of times in all possible ways. And I finally managed to make one of MY FAVORITE DESSERTS.

We take a litre of organic milk and boil it with a pinch of salt. When hot enough (but before it reaches the boiling point) we add the rice and lower the temperature to low. If we prefer a more fatty and milky result, we can add 25 grams of butter. We stir relatively often, taking care that the grains of rice will not stick to the bottom of the pot.

When the milk is boiling, in combination with rice starches, it begins to create a light cream. Once this happens (it will take 25 to 40 minutes depending on the rice and the intensity of the heat), we add the sugar, we mix well to let it melt and incorporate, and keep stirring we wait till the cream thickens a bit more.

The final whole mixture should resemble the texture and moisture of the risotto that is still in the pan.

At the same time, we check that the rice has boiled. If it is still hard, we dilute it with a little hot water or milk and we continue cooking as long as necessary.

At the very last moment we add half amount of the rosewater.

We divide the rice pudding evenly into 4 dishes, making sure that all the servings have the same proportions of ¨cream¨ and rice. We cover with plastic wrap, so that the rice milk doesn’t form ¨skin¨ and put it in the fridge to chill well for at least 3-4 hours, ideally overnight.

Before serving, we spray each portion with the rest of the rosewater and we decorate with the dried petals.

CAUTION: Rice pudding should be consumed within 48 hours. Then it becomes heavy and very indigestible.
