mussels with chickpeas, cherry tomatoes and basil

Cooking can be much quicker than waiting for the delivery boy.


ingredients for 4 servings (cost about 3€ pp)
  • 10 mussels per person
  • 4 cherry tomatoes per person
  • 50 g boiled chickpeas per person
  • Salt
  • EV Olive oil
  • Garlic oil
  • Basil leaves

I can´t understand some working people, who often choose the delivery option, thinking that preparing a meal is something, too complicated.

In this page we will try to convince you that there is an alternative and that everybody can prepare his meal very quickly with little effort.

So, when we return home from our job we make a stop at our favorite fisherman and we buy some mussels, they are very cheap.

When entering at home, we put them directly in water and, at the same time, we take out of the freezer some already boiled chickpeas and we put them, as well, in plenty of fresh COLD, I REPEAT COLD, WATER.

We put a pan on the burner to preheat it.

We add some oil. We strain the chickpeas and we put them in the pan. We also put the mussels in a casserole with a cover to open and meanwhile we cut the cherry tomatoes.

We add the cherry tomatoes and the already open mussels in the pan with the garlic oil and the salt. We sauté for a minute, we add the basil leaves and we serve.
