Da sempre, durante il periodo pasquale, in particolare il Gioved\u00ec Santo, in ogni cucina napoletana, \u00e8 tradizione prepararne una, per poterla consumare il giorno di Pasqua.<\/p>\n\n\n\n<p>Questo capolavoro \u2013 considero la pastiera la regina delle crostate \u2013 consiste di una base di frolla e un ripieno di crema di ricotta, chicchi di grano e uova, aromatizzato con scorzette di arancia candite, scorza di limoni e arance e acqua di fiori d'arancio, il tutto lavorato in un equilibrio perfetto. Poesia pura!<\/p>\n\n\n\n<p>Come quasi tutte le crostate italiane, la pastiera \u00e8 decorata con un motivo a losanghe. Quindi dobbiamo cucinarli da soli. Prima di cuocerli, per\u00f2, \u00e8 meglio metterli a bagno in abbondante acqua per 2-3 giorni e cambiando l'acqua due volte al giorno (conserviamo in frigo, durante tutto il tempo di ammollo).<\/p>\n\n\n\n<p>Il giorno prima di infornare la crostata, prepariamo una porzione della <a href=\"https:\/\/democraticgourmet.com\/it\/basic-frolla-dough-for-italian-stuffed-pastries\/\" target=\"_blank\" rel=\"noreferrer noopener\">la nostra pasta frolla<\/a><em>,<\/em> usando limone e arancia come aromatici. In questo caso omettiamo i lieviti (non vogliamo che la base si gonfi).<em> <\/em>Lasciamo riposare l'impasto in frigo per una notte.<\/p>\n\n\n\n<p>Dobbiamo anche cuocere i chicchi di grano. Quindi, dopo averli ben scolati, li mettiamo in una pentola e li copriamo con abbondante acqua (almeno 4 volte il loro peso). Portiamo a bollore pieno e poi li lasciamo cuocere a fuoco molto molto dolce per circa 1,5 \u2013 2 ore, senza mescolare. Poi spegniamo il fuoco e li lasciamo raffreddare nell'acqua calda. Alla fine dovrebbero diventare davvero teneri (come nella figura seguente, a destra). Li scoliamo bene e li conserviamo in frigo, fino al momento di utilizzarli. Aggiungiamo il latte, il burro, le scorze di limone e arancia e le cuociamo a fuoco bassissimo, mescolando continuamente e \u201cspezzando\u201d i grani con una forchetta, fino a quando non assorbono gran parte del latte e diventano una massa cremosa (circa 20 minuti pi\u00f9 o meno).<\/p>\n\n\n\n<p>Trasferiamo la crema di grano in una ciotola, copriamo con pellicola e teniamola in frigo, finch\u00e9 non si raffredda completamente. Impastiamo anche la ricotta con lo zucchero, le copriamo con la pellicola e le lasciamo in frigo, per lo stesso tempo.<\/p>\n\n\n\n<p>Una volta che la crema di grano si sar\u00e0 completamente raffreddata, possiamo concludere la preparazione.<\/p>\n\n\n\n<p>Uniamo le uova e il tuorlo alla ricotta e allo zucchero, uno alla volta, mescolando bene dopo ogni aggiunta, fino a completo assorbimento. Aggiungiamo anche la scorza appena grattugiata di 1\/2 limone e 1\/2 arancia, l'acqua di fiori d'arancio e le scorzette d'arancia candite tagliate a dadini piccoli. Aggiungiamo infine la crema di grano (dopo aver scartato le bucce di limone e arancia) e mescoliamo bene.<\/p>\n\n\n\n<p>Siamo pronti per procedere al montaggio della pastiera. Togliamo l'impasto dal frigo e lo tagliamo in due parti irregolari (una 3\/4 e una 1\/4). Stendiamo la parte per 3\/4 in un disco di 4-5 mm di spessore e foderiamo una tortiera da crostata 20x4 cm, precedentemente ben imburrata. <\/p>\n\n\n\n<p>Versiamo il ripieno all'interno della base di crostata, facendo attenzione a lasciare mezzo centimetro di margine dall'alto del bordo (perch\u00e9 la crema si gonfier\u00e0 durante la cottura). Quindi stendiamo la parte 1\/4 e tagliamo 7 strisce di 1,5 mm di larghezza. Posizioniamo le strisce trasversalmente (4 e 3) sopra la crostata, disponendole a distanza regolare, mirando a formare un motivo a losanga simmetrico, come potete vedere nella foto sotto. Tagliamo l'eccesso di strisce su tutta la crostata, premendole delicatamente con il dito sui bordi della tortiera. Dopo che si \u00e8 completamente raffreddata, la spolveriamo con lo zucchero a velo. <\/p>\n\n\n\n<p>Siete pazienti, prima di consumarla! Credetemi, pi\u00f9 la pastiera napoletana riposa, pi\u00f9 diventa buona!
