E molto popolare nel Sud Europa, dove preparano le melanzane in molti modi.<\/p>\n\n\n\n<p>Per prima cosa dobbiamo arrostire due grossi pomodori per circa 45 minuti. Poi togliamo la pelle e le tagliamo a pezzetti. Manteniamo le parti solide. Tagliamo a pezzetti anche la mozzarella. Teniamo da parte.<\/p>\n\n\n\n<p>Poi prendiamo una melanzana e la tagliamo a fette molto sottili, facendo 12 fette senza il bordo. Pre-saliamo le melanzane e le mettiamo in uno scolapasta per 30 minuti.<\/p>\n\n\n\n<p>Trascorso quel tempo le asciughiamo bene e le friggiamo in olio di semi di girasole poche alla volta, facendo attenzione a non bruciarle. Per questo motivo la temperatura dell'olio dovrebbe essere pi\u00f9 bassa del solito (170oC). Asciughiamo e mettiamo da parte.<\/p>\n\n\n\n<p>Preriscaldiamo il nostro forno a 180\u00b0C. Iniziamo a costruire una torre alternando fette di melanzane, parmigiano, pomodoro, sale, mozzarella e pepe e finiamo con salsa e olio d'oliva.
