{"id":5920,"date":"2022-01-05T12:37:22","date_gmt":"2022-01-05T11:37:22","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=5920"},"modified":"2026-03-04T12:59:55","modified_gmt":"2026-03-04T11:59:55","slug":"pea-soup-with-fresh-quadretti","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/pea-soup-with-fresh-quadretti\/","title":{"rendered":"Pea soup with fresh quadretti"},"content":{"rendered":"<h3 class=\"wp-block-heading has-text-align-center\"><em>We turn to soup a classic Spanish combination!<\/em> <\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 2 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>sale<\/li>\n\n\n\n<li>200 gr peas<\/li>\n\n\n\n<li>100 g di pasta fresca<\/li>\n\n\n\n<li>1,2 litre chicken or jam\u00f3n stock<\/li>\n\n\n\n<li>A pinch of cinnamon <\/li>\n\n\n\n<li>Menta fresca<\/li>\n\n\n\n<li>Olio d\u00b4 oliva EV<\/li>\n\n\n\n<li>Pepe nero<\/li>\n\n\n\n<li>Gocce di limone<\/li>\n\n\n\n<li>2 slices jam\u00f3n serrano (optional) <\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>The combination peas + mint + jam\u00f3n is more than classic in Catalonia and the whole Spain. It is also used vastly in Italy, where the cold cut used is the prosciutto.<\/p>\n\n\n\n<p>The net is full of recipes of the classic version of the dish, let\u00b4s do something different. Let\u00b4s prepare a soup with fresh pasta. We will also substitute the jam\u00f3n with stock of jam\u00f3n, if we afford a bone otherwise we will use the cold cut. <\/p>\n\n\n\n<p>To prepare the jam\u00f3n stock we first blanch the bone for about 5 mins, we then change the water and starting from cold we simmer the bone with a carrot, a leek and a pinch of cinnamon for about 2 hours. One bone is enough for about 3 litres of stock. If we cannot find a jam\u00f3n bone, we use chicken stock, we fry 2 slices of cheap  jam\u00f3n (serrano) till crispy and we add it, minced, when the soup is ready. But the best way is the jam\u00f3n stock. <\/p>\n\n\n\n<p>Before starting we also blanch the peas in salted water or in the stock for about 3 minutes. If we use frozen peas, we must fully defrost them first.    <\/p>\n\n\n\n<p>We prepare 100 gr fresh pasta with or without eggs, as we have learnt <a href=\"https:\/\/democraticgourmet.com\/it\/the-encyclopaedia-of-fresh-pasta\/\" target=\"_blank\" rel=\"noreferrer noopener\">qui<\/a>. We pass the pasta from the machine, stopping at the dimension 4, as we want the pasta sheet to be relatively thin. We carry the pasta at the cutters of the machine and we make it tagliatelle.
