L'eterno dilemma di Capodanno a Grecia!<\/em><\/em><\/em><\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per <strong>8 porzioni generose<\/strong> (costo totale circa 11 \u20ac con ingredienti biologici)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>175 g di burro<\/li><li>35 g di olio d'oliva EV<\/li><li>175 g di zucchero<\/li><li>250 g (5) uova<\/li><li>325 g di farina 00<\/li><li>20 g di lievito in polvere<\/li><li>100 ml di liquore al cumquat (o altro liquore agli agrumi, come il Grand Marnier)<\/li><li>130 ml di latte<\/li><li>60 g di pistacchio tritato + extra per la decorazione<\/li><li>70 g di scorze candite di arance e\/o mandarini tritate<\/li><li>40 g di fichi secchi tritati grossolanamente<\/li><li>20 g di uvetta sultanina<\/li><li>20 g di uvetta nera<\/li><li>2 cucchiaini di cannella<\/li><li>1\/8 cucchiaino di chiodi di garofano macinati<\/li><li>1\/8 cucchiaino di noce moscata macinata<\/li><li>1\/8 cucchiaino di anice stellato macinato<\/li><li>1\/8 cucchiaino di coriandolo macinato<\/li><li>1 pizzico di sale<\/li><li>zucchero a velo per spolverizzare<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>In Grecia, dopo il cenone di Capodanno, come vuole la tradizione, si serve la Vasilopita, dedicata a San Basilio. Al suo interno \u00e8 nascosta una moneta, e chi la trova nel suo pezzo servito, \u00e8 considerato avere un anno fortunato.<\/p>\n\n\n\n<p>Se il dilemma di Natale \u00e8 melomakarona o kourabiedes, quello di Capodanno \u00e8 brioche o torta Vasilopita. Non riesco a immaginare una famiglia greca, i cui membri non hanno mai discusso sul tipo di Vasilopita che prepareranno. La Famiglia del Democratic Gourmet non fa eccezione. Mentre Vangelis era sempre a favore della base brioche (in greco la chiamiamo tsoureki), io preferivo la versione torta, da quando mi ricordo di me (Nuri non ama i dolci, quindi non partecipa al sondaggio).<\/p>\n\n\n\n<p>L'argomento di Vangelis \u00e8 sempre stato che le torte Vasilopita sono noiose in termini di sapore e solitamente secche. Beh, ad essere onesti, questo \u00e8 vero. La maggior parte delle versioni della torta Vasilopita sono torte al burro semplici, dal sapore povero. Un'immagine classica del capodanno della mia infanzia, \u00e8 che tutti \u2013 e soprattutto i bambini \u2013 scavano ansiosamente dentro il loro pezzo, cercando la moneta portafortuna e poi lasciavano la torta dentro il piatto!<\/p>\n\n\n\n<p>Quindi, non avendo nulla da dire per dimostrare che si sbagliava, per anni sceglievamo un tsoureki vasilopita. E il mito della torta vasilopita noiosa e secca \u00e8 stato preservato. Fino a un anno, ho deciso di lasciare Vangelis senza discussioni e ho fatto del mio meglio per fare una torta vasilopita ORIGINALE, che fosse succosa, tenera e ricca di vari aromi e sapori festivi.<\/p>\n\n\n\n<p>Per renderla pi\u00f9 tenera e succosa, ho sostituito una parte di burro con l'olio. Per quanto riguarda gli aromi e il sapore, prima di tutto ho aggiunto spezie natalizie \u2013 cannella, chiodi di garofano, noce moscata, anice stellato, coriandolo \u2013 per ipnotizzarlo. Ho usato anche una grande quantit\u00e0 di agrumi canditi fatti in casa \u2013 arance e mandarini \u2013 oltre a frutta essiccata, come fichi secchi, uvetta sultanina e nera ed anche di liquore al kumquat. Per la frutta secca, infine, ho scelto il pistacchio, perch\u00e9 trovo il suo colore verde ideale per una decorazione festiva.<\/p>\n\n\n\n<p>Il risultato? Eccellente!<\/p>\n\n\n\n<p>Per prima cosa adagiamo in una ciotola le uvette e i fichi secchi, li ricopriamo con il liquore (leggermente scaldato), aggiungiamo abbastanza acqua tiepida da coprirli completamente, e li lasciamo in ammollo per circa 1 ora circa . Se la torta \u00e8 destinata ad essere consumata anche dai bambini, possiamo portare a bollore il liquore con un po' d'acqua e farlo cuocere per circa 30 secondi dal punto di ebollizione, in modo che l'alcool evapori. Poi lo lasciamo raffreddare un po' e lo versiamo sulla frutta secca. Sbollentiamo anche i pistacchi per un minuto in acqua bollente, per sbucciarli facilmente e li facciamo tostare per circa 5-8 minuti a 120\u00b0C.<\/p>\n\n\n\n<p>Setacciamo insieme tutti gli ingredienti secchi (farina, lievito, spezie e sale), tranne lo zucchero e mettiamo da parte. Ungiamo bene una tortiera tonda di alluminio da 24 cm, la rivestiamo con carta da forno, imburriamo di nuovo la carta facendo attenzione a non lasciare macchie non lubrificate e spolveriamo di farina ovunque.<\/p>\n\n\n\n<p>In una planetaria sbattiamo il burro, gi\u00e0 a temperatura ambiente e lo zucchero per circa 5-8 minuti, fino a quando il burro diventa morbido, cremoso, bianco chiaro e spumoso. Aggiungiamo le uova (anche a temperatura ambiente), una ad una e mescoliamo, aspettando che ciascuna di esse sia completamente incorporata, prima di aggiungere la successiva. Quindi aggiungiamo l'olio e mescoliamo per unire.<\/p>\n\n\n\n<p>Nel frattempo scoliamo l'uvetta e i fichi imbevuti, conservando il liquore. Asciughiamo bene tutto con carta da cucina e lo mescoliamo con le scorze candite e il pistacchio tostato e tritato.<\/p>\n\n\n\n<p>Quando le uova e l'olio d'oliva sono completamente incorporati nell'impasto della torta, iniziamo ad aggiungere il resto degli ingredienti, in lotti e nel seguente ordine: ingredienti secchi, liquidi (latte e liquore), frutta mista e noci.<\/p>\n\n\n\n<p>Versiamo la pastella densa nella tortiera preparata e la cuociamo in forno preriscaldato a 140\u00b0 per circa 1 ora.<\/p>\n\n\n\n<p>Quando \u00e8 pronta, togliamo la torta dal forno, la lasciamo raffreddare per circa 10 minuti, poi la sformiamo girandola su un piatto. Se vogliamo aggiungere la tradizionale moneta, prima la avvolgiamo con un foglio di alluminio e la inseriamo premendola verticalmente all'interno del fondo della torta, mentre \u00e8 capovolta. Quindi giratela ancora una volta e fatela raffreddare su una gratella. Una volta che la vasilopita si sar\u00e0 completamente raffreddata, la spolveriamo generosamente con zucchero a velo e la guarniamo con il pistacchio tritato.<\/p>\n\n\n\n<p>Nuri, Vangelis ed io, auguriamo a tutti voi un felice anno nuovo e\u2026 congratulazioni al fortunato!!!<\/p>\n\n\n\n<p>NOTA: Potete creare le vostre scorze candite.
