{"id":5744,"date":"2026-03-12T16:22:24","date_gmt":"2026-03-12T15:22:24","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=5744"},"modified":"2026-03-14T15:21:40","modified_gmt":"2026-03-14T14:21:40","slug":"spaghetti-with-nettle-cream-and-squash","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/spaghetti-with-nettle-cream-and-squash\/","title":{"rendered":"Spaghetti con crema di ortiche e zucca"},"content":{"rendered":"<h3 class=\"has-text-align-center wp-block-heading\" id=\"if-you-cannot-find-nettle-use-chervil-or-hartwort-or-even-dandelion\"><em>Se non riuscite a trovare l'ortica, usate il cerfoglio o l' ombrellino pugliese o persino il dente di leone! <\/em> <\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"ingredients-for-4-servings-cost-about-1-5-pp\">ingredienti per 4 persone (costo circa 1,5 E a persona)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>Sale<\/li><li>320 g di spaghetti<\/li><li>150 g di polpa di zucca<\/li><li>Un gran mazzo di foglie di ortica<\/li><li>Olio d\u00b4 oliva EV<\/li><li>2 spicchi d\u00b4 aglio<\/li><li>40 g di Parmigiano Reggiano<\/li><li><span style=\"font-family: var(--list--font-family); background-color: var(--global--color-background); color: var(--global--color-primary); font-size: var(--global--font-size-base);\">Pepe nero<\/span><\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>&#8211;<em> Comincio a capire che hai un'ossessione per le ortiche, amico mio!<\/em>!<\/p>\n\n\n\n<p>- Perch\u00e9 no? Le ortiche e tutte le altre erbe spontanee sono molto economiche (praticamente si possono anche raccogliere perch\u00e9 sono abbondanti su ogni prato), molto gustose e molto attrattive. E soprattutto ti riempiono di una sensazione di pulizia, di salute, di benessere. Adoro tutte le erbe spontanee e le ortiche sono le mie preferite. Forse per i miei ricordi e per le innumerevoli volte che, da giovane, le ortiche mi pungevano durante le amichevoli di calcio. In realt\u00e0 quei giochi non erano affatto amichevoli, finivano sempre con problemi! Che bella epoca!!!!<\/p>\n\n\n\n<p><em>\u2013 E ora dici alla gente di comprare le ortiche\u2026\u2026.<\/em><\/p>\n\n\n\n<p>\u2013 Non c'\u00e8 assolutamente nessun problema. Le ortiche possono essere mondate dopo averle bollite, quando l'acido formico (questa \u00e8 la sostanza avara) sar\u00e0 stato disattivato. Puoi anche tagliare le loro foglie con una forbice, quando sono crude, mentre tieni il gambo con un guanto. In ogni caso solo poche persone allergiche possono avere problemi (non molto gravi) con le ortiche crude. <\/p>\n\n\n\n<p>Bene, veniamo al piatto di oggi.<\/p>\n\n\n\n<p>Per prima cosa portiamo a bollore una pentola con acqua salata. <\/p>\n\n\n\n<p>Tagliamo la polpa di zucca a cubetti e la facciamo bollire per circa 3 minuti. Togliamo i cubetti di zucca e aggiungiamo le ortiche. Le facciamo bollire per 1-2 minuti, le togliamo e le montiamo, scartando i gambi duri e fibrosi. Mettiamo le ortiche in un barattolo e ne facciamo la polpa con il frullatore ad immersione.<\/p>\n\n\n\n<p>Nel frattempo in una padella fredda aggiungiamo l'olio d'oliva e gli spicchi d'aglio schiacciati ma non sbucciati. Portiamo sul fuoco e facciamo soffriggere dolcemente l'aglio fino a doratura. Togliamo le parti solide dell'aglio, alziamo il fuoco a medio e facciamo rosolare leggermente i cubetti di zucca.<\/p>\n\n\n\n<p>Nella stessa acqua bollente dove abbiamo cotto le ortiche, aggiungiamo gli spaghetti e li facciamo bollire per 2 minuti in meno rispetto al tempo scritto sulla confezione. Li scoliamo e li mettiamo in padella con l'olio, la polpa di ortica e due mestoli di acqua bollente della pentola.<\/p>\n\n\n\n<p>Iniziamo a mantecare la pasta, fino ad ottenere una salsa verde cremosa.
