{"id":5533,"date":"2023-06-07T14:49:38","date_gmt":"2023-06-07T12:49:38","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=5533"},"modified":"2026-02-24T15:03:15","modified_gmt":"2026-02-24T14:03:15","slug":"sicilian-orange-gelo-with-cardamom-and-candied-peels","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/sicilian-orange-gelo-with-cardamom-and-candied-peels\/","title":{"rendered":"Gelo di arance con cardamomo e scorze candite"},"content":{"rendered":"<h3 class=\"wp-block-heading has-text-align-center\"><em><em><em><em>Un altro gioiello della famiglia Siciliana!<\/em>!<\/em><\/em><\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredients for about 6 servings (total cost about 3 \u20ac with organic products)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 litro di succo d'arancia appena spremuto, filtrato<\/li>\n\n\n\n<li>70 g di amido di frumento (frumina) <\/li>\n\n\n\n<li>100 g di zucchero o pi\u00f9 secondo il gusto e la dolcezza delle arance<\/li>\n\n\n\n<li>un pizzico di sale<\/li>\n\n\n\n<li>una manciata di scorzette d'arancia candite<\/li>\n\n\n\n<li>qualche seme di cardamomo, leggermente schiacciate<\/li>\n\n\n\n<li>scorze d'arancia candite tritate per guarnire e un po' di cardamomo schiacciato in pi\u00f9<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>I geli acquisiscono corpo e consistenza con l'aggiunta di un agente addensante. I siciliani utilizzano tradizionalmente l'amido di frumento come addensante che \u00e8 molto resistente alla liquefazione e offre una particolare compattezza.<\/p>\n\n\n\n<p>Si pu\u00f2 usare invece l'amido di mais (maizena), anche se il suo difetto \u00e8 che \u00e8 pi\u00f9 sensibile alla liquefazione. Tenete presente che la frumina \u00e8 pi\u00f9 potente in termini di capacit\u00e0 addensante e produce geli pi\u00f9 densi rispetto all'amido di mais. Quindi, se usate la frumina, aggiungete solo il 7% del peso del succo, invece del rapporto dell'8%, che usiamo con l'amido di mais. Se vi piace che il gelo sia pi\u00f9 cremoso, potete abbassare ancora di pi\u00f9 il rapporto, cio\u00e8 per l'amido di mais usate il 7% e per la frumina il 6%. <\/p>\n\n\n\n<p>Per preparare il gelo all'arancia, portiamo a ebollizione 8\/10 del succo d'arancia filtrato insieme ai semi di cardamomo schiacciati, le scorze d'arancia e lo zucchero. Quando raggiunge il punto di ebollizione, togliamo dal fuoco, copriamo con pellicola e lasciamo in infusione per circa 30min.<\/p>\n\n\n\n<p>Setacciamo la maizena o la frumina in una ciotola adatta al bagnomaria, aggiungiamo i restanti 2\/8 del succo d'arancia e mescoliamo, finch\u00e9 la polvere non si scioglie completamente. Quindi filtriamo il succo infuso, lo aggiungiamo alla ciotola con l'amido sciolto e inseriamo la ciotola su una pentola riempita per met\u00e0 con acqua leggermente bollente (l'acqua non deve toccare il fondo della ciotola). Cuociamo a fuoco medio mescolando con una frusta, fino a quando non inizia ad addensarsi e otteniamo una crema fine e vellutata.<\/p>\n\n\n\n<p>Togliamo la ciotola dal bagnomaria e assaggiamo per controllare la dolcezza. Se non \u00e8 abbastanza dolce, possiamo aggiungere dello zucchero a velo (si scioglie pi\u00f9 facilmente), mescolare e assaggiare di nuovo, fino a raggiungere la dolcezza desiderata. Continuiamo a sbattere ancora per aiutare il gelo a raffreddarsi un po', poi trasferiamo in singoli bicchieri da portata o stampini di silicone.
