Ma perch\u00e9?<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 6 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sale<\/li>\n\n\n\n<li>800 g di spalla di manzo<\/li>\n\n\n\n<li>2 cipolle piccole<\/li>\n\n\n\n<li>Una foglia di alloro<\/li>\n\n\n\n<li>Olio d\u00b4 oliva EV<\/li>\n\n\n\n<li>50 ml di vino rosso<\/li>\n\n\n\n<li>500 ml di brodo vegetale o di manzo <\/li>\n\n\n\n<li>400 g di patate<\/li>\n\n\n\n<li>400 g di patate dolci<\/li>\n\n\n\n<li>80 grammi di burro<\/li>\n\n\n\n<li>80 ml di latte<\/li>\n\n\n\n<li>40 g di Parmigiano Reggiano<\/li>\n\n\n\n<li>100 g di piselli piccoli<\/li>\n\n\n\n<li>Pepe nero macinato grosso<\/li>\n\n\n\n<li>Pangrattato<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>Sono sicuro che avete gi\u00e0 sentito la parola Parmentier. Sapete cosa significa esattamente? <\/p>\n\n\n\n<p>Secondo Wikipedia \u201c<em>Antoine Parmentier era un farmacista\u00a0e agronomo francese, ricordato soprattutto come promotore della patata\u00a0come fonte di cibo per l'uomo in tutta Europa\"<\/em>. Dopo la sua morte molte preparazioni con patata hanno preso il suo nome, per indicare che la patata \u00e8 uno degli ingredienti principali del piatto. Tra queste preparazioni troviamo zuppe, creme e ovviamente il famoso hachis (parmentier con carne di manzo con sopra purea gratinata). Prepariamone uno. <\/p>\n\n\n\n<p>Prima di tutto dobbiamo cuocere la carne. <\/p>\n\n\n\n<p>La tagliamo a pezzi e la rosoliamo nell'olio. Sfumiamo con il vino e aggiungiamo le cipolle sbucciate e tagliate a met\u00e0. Continuiamo a soffriggere dolcemente per 2-3 minuti, abbassiamo la fiamma al minimo, aggiungiamo il brodo, una foglia di alloro e un po' di sale e cuociamo la carne fino a renderla molto molto tenera. Estremamente tenera. Ho scelto di utilizzare sia patate che patate dolci. Come mai? Le patate dolci hanno un gusto speciale e anche un colore attraente. Ma sono troppo dolci per alcune persone. Cos\u00ec ho deciso di ridurne la dolcezza, preparando una purea di patate e patate dolci.  <\/p>\n\n\n\n<p>Le sbucciamo e le tagliamo a pezzi e poi le cuociamo a vapore fino a renderle molto tenere. Separatamente, poich\u00e9 le patate comuni hanno bisogno di pi\u00f9 tempo. Cuocendo le patate al vapore invece di lessarle, ne esaltiamo l'aroma (che cazzo di Parmentier prepariamo?) e le rendiamo anche meno umide. Le facciamo una purea quando sono ancora calde. Aggiungiamo il burro, il latte, il parmigiano e un po' di pepe, controlliamo il sale e teniamo da parte.<\/p>\n\n\n\n<p>Sbollentiamo anche i piselli per 2 \u2013 3 minuti in acqua salata molto calda. Aggiungiamo i piselli alla carne. Preriscaldiamo il forno a 200 gradi Celsius. <\/p>\n\n\n\n<p>Ungiamo quattro pirofile individuali di terracotta. Mettiamo sul fondo del pangrattato e uniamo la carne. La premiamo leggermente per garantire una struttura stabile e sopra aggiungiamo la purea.
