Lo preparo almeno una volta al mese, cucinato in tanti modi. Preparo anche una variet\u00e0 di contorni, perch\u00e9 le onnipresenti patate arrosto a volte mi sembrano noiose.<\/p>\n\n\n\n<p>Molte volte durante l'autunno preparo questo contorno. Se ben fatto \u00e8 fantastico, in quanto la dolcezza delle castagne e delle patate dolci si sposa perfettamente con i composti aromatici del finocchio.<\/p>\n\n\n\n<p>Andiamo a vedere come lo prepariamo. <\/p>\n\n\n\n<p>Le castagne hanno due svantaggi:<\/p>\n\n\n\n<p>a) Si rovinano molto facilmente. Quindi, subito dopo averle acquistate, dovete metterle a un posto fresco i secco, in un sacchetto di carta e consumarle il pi\u00f9 presto possibile.<\/p>\n\n\n\n<p>b) Sono difficili da sbucciare. Esistono molte tecniche per sbucciare le castagne (un taglio su entrambi i lati, una croce alla base) ma la pi\u00f9 importante \u00e8 che devono essere calde, molto calde al momento della sbucciatura. In Grecia c'\u00e8 una frase fissa \u201cChi toglier\u00e0 le castagne dal fuoco?\u201d, a significare che qualcosa \u00e8 troppo difficile da provare.<\/p>\n\n\n\n<p>Quindi, il trucco per sbucciare \u201cfacilmente\u201d le castagne \u00e8 farle bollire a lotti per 5 minuti (dopo averle intagliate sui lati o sul fondo) e sbucciarle IMMEDIATAMENTE che escono dalla pentola. Facciamo lo stesso per il piatto di oggi. Dopo averle sbucciate continuiamo la loro cottura per altri 15 minuti. Vogliamo che siano abbastanza tenere. Le togliamo dall'acqua e le teniamo da parte.<\/p>\n\n\n\n<p>Le patate dolci bianche non sono umide come quelle rosse. Direi che sono pi\u00f9 patate che patate dolci. Quindi, dobbiamo pre-cuocerle. E non c'\u00e8 modo migliore che cuocerle a vapore, tagliate a pezzi, finch\u00e9 sono tenere. Selezionando questo modo di precottura ci aiuta a mantenere i composti dolci della radice. <\/p>\n\n\n\n<p>Anche i finocchi, per il piatto di oggi, necessitano di una precottura. Quindi, dopo aver scartato le foglie esterne dure e fibrose, tagliamo a pezzi i finocchi e li facciamo lessare in acqua bollente salata fino a quando saranno teneri.<\/p>\n\n\n\n<p>Preriscaldiamo il forno a 200 gradi Celsius. Mescoliamo l'olio di semi di girasole EV con il burro fuso, saliamo le verdure e mescoliamo bene.
