{"id":4823,"date":"2022-04-30T15:38:06","date_gmt":"2022-04-30T13:38:06","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=4823"},"modified":"2022-04-30T15:41:17","modified_gmt":"2022-04-30T13:41:17","slug":"the-famous-sicilian-caponata","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/the-famous-sicilian-caponata\/","title":{"rendered":"la famosa caponata siciliana"},"content":{"rendered":"<h3 class=\"has-text-align-center wp-block-heading\"><em>La stagione delle melanzane \u00e8 gi\u00e0 iniziata, allora \u00e8 arrivato il tempo per uno dei migliori piatti del mondo<\/em> <\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni abbondanti (costo circa 3\u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>sale<\/li><li>1 kg di melanzane<\/li><li>1 cipolla grande<\/li><li>1 barattolo di pomodori pelati<\/li><li>250 g gambi di sedano<\/li><li>12 olive verdi<\/li><li>24 capperi<\/li><li>30 g di pinoli tostati<\/li><li>Olio di semi di girasole EV<\/li><li>100 ml di olio d'oliva EV <\/li><li>100 ml di aceto bianco di prima qualit\u00e0<\/li><li>1 cucchiaino di zucchero<\/li><li>prezzemolo per guarnire<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>A mio parere, la caponata \u00e8 il miglior piatto in assoluto che possiamo preparare con le melanzane. Bene, amo la ratatouille francese, i papoutsakia greci e l'escalivada catalana, ma una caponata siciliana ben fatta \u00e8 un piatto di classe superiore. Punto.    <\/p>\n\n\n\n<p>La caponata si mangia fresca, in giardino, sul balcone, in campagna o in spiaggia, durante le meravigliose serate primaverili ed estive, che quasi tutti i bei luoghi del Mediterraneo ci offrono.<\/p>\n\n\n\n<p>Ma per preparare una caponata perfetta bisogna seguire alcune regole.<\/p>\n\n\n\n<p>Innanzitutto le verdure devono essere molto fresche. Bisogna conoscere che le melanzane vanno consumate 3 max 4 giorni dopo la raccolta, in modo da mantenere il loro aroma potente e la loro buccia (relativamente) tenera. <\/p>\n\n\n\n<p>L'uso del sedano \u00e8 ci\u00f2 che fa aumentare il valore dell'intera preparazione. Ho visto cuochi in rete che preparano la loro caponata senza sedano!!! Davvero non capisco perch\u00e9. <\/p>\n\n\n\n<p>Quindi, prima di preparare il piatto dobbiamo mettere le olive e i capperi in abbondante acqua fredda in modo da togliere i cattivi aromi di salamoia e altri conservanti. Non pensare nemmeno di superare questa fase. Le olive (a mio parere) meglio che non siano snocciolate, perch\u00e9 la noce aggiunge aroma all\u00b4oliva. In ogni modo dobbiamo completamente evitare le olive snoccciolate del mercato. <\/p>\n\n\n\n<p>Iniziamo a tagliare le melanzane a cubi di media grandezza. Li saliamo e li mettiamo in un colino capiente per circa un'ora in modo da eliminare parte dei loro liquidi. Se le trattiamo cos\u00ec, le melanzane assorbiranno meno olio durante la frittura. Trascorso questo tempo, li asciughiamo bene e li friggiamo in lotti in olio di semi di girasole EV a circa 180 gradi Celsius.<\/p>\n\n\n\n<p>Nel frattempo, in una pentola con acqua bollente salata, facciamo bollire i gambi di sedano, tagliati a pezzi, finch\u00e9 sono teneri. Se i gambi sono grandi e spessi e sospettiamo che possano avere fibre dure, li sbucciamo e scartiamo la parte inferiore.<\/p>\n\n\n\n<p>Prepariamo quindi una salsa, facendo soffriggere dolcemente una cipolla tagliata a dadini nell'olio d'oliva e aggiungendo i pomodori pelati, tagliati a pezzi grossolani. Dopo 10 minuti aggiungiamo le olive, i capperi, lo zucchero e l'aceto e proseguiamo per altri 5 minuti circa.<\/p>\n\n\n\n<p>Aggiungiamo le melanzane e il sedano e proseguiamo per due minuti.
