{"id":4389,"date":"2022-04-23T10:41:46","date_gmt":"2022-04-23T08:41:46","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=4389"},"modified":"2022-04-23T14:20:10","modified_gmt":"2022-04-23T12:20:10","slug":"striped-red-mullets-in-escabeche-sauce","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/striped-red-mullets-in-escabeche-sauce\/","title":{"rendered":"triglie in salsa escabeche"},"content":{"rendered":"<h3 class=\"has-text-align-center wp-block-heading\"><em>Il re del Mediterraneo al suo meglio!<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 6 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>1 kg di triglie piccole<\/li><li>Olio di semi di girasole EV per friggere<\/li><li>4 spicchi d'aglio NON pelati, al vapore o arrostiti<\/li><li>200 ml di olio d'oliva EV<\/li><li>100 ml di aceto bianco di prima qualit\u00e0<\/li><li>100 ml di vino bianco<\/li><li>1 barbabietola grande, cotta al vapore o arrostita e tagliata a dadini<\/li><li>10 cipollotti, al vapore o arrostiti <\/li><li>2 carote grandi, al vapore o arrostite e tagliate a pezzi<\/li><li>1 foglia di alloro<\/li><li>Paprica<\/li><li>Sale<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>Escabetx, escabeche o scapece, \u00e8 una meravigliosa tecnica di cottura catalana, che ci aiuta a cuocere e conservare il pesce, i frutti di mare, le verdure o la carne fino a 10 giorni a una temperatura fresca. Oggi prepariamo cos\u00ec il re del Mediterraneo, la triglia, un pesce dal gusto molto caratteristico. Per questo piatto abbiamo bisogno di triglie piccole ed economiche.<\/p>\n\n\n\n<p>Iniziamo preparando le verdure, cuocendole al vapore o arrostendole, come gi\u00e0 detto. Vi ricordo che cuocendo al vapore o arrostendo le verdure, invece di bollirle, riusciamo a mantenerne il colore, il gusto e i benefici nutrizionali.   <\/p>\n\n\n\n<p>Continuiamo con la precottura del pesce. Li laviamo, gli eliminiamo l'intestino e li asciughiamo.<\/p>\n\n\n\n<p>Preriscaldiamo l'olio di semi di girasole EV a 180\u00b0 \u2013 190\u00b0C e li friggiamo, tenendo presente che continueranno a cuocersi nella salsa. Li lasciamo raffreddare. <\/p>\n\n\n\n<p>In un'altra padella aggiungiamo l'olio d'oliva, il vino e l'aceto e portiamo a bollore. Saliamo il liquido e dopo 1-2 minuti aggiungiamo i pesci, le verdure, la paprika e l'alloro, abbassiamo la temperatura e li cuociamo per altri 3 minuti.<\/p>\n\n\n\n<p>Lasciamo i pesci riposare nella salsa per almeno 12 ore. \u00c8 ovvio che possiamo mangiarli prima, ma gli aromi non saranno cos\u00ec forti come dovrebbero.
