Questa volta mi ha regalato delle meravigliose nocciole e mandorle. Cos\u00ec gli ho promesso che avrei fatto una torta relativa.<\/p>\n\n\n\n<p>\u2013 Quali ingredienti vorresti che usassi? gli ho chiesto.<\/p>\n\n\n\n<p>&#8211;<em>Beh, ti render\u00f2 le cose difficili. Preferirei dirti cosa non usare. Si pu\u00f2 fare senza grassi e farina?<\/em><\/p>\n\n\n\n<p>-Ovviamente. Uova?<\/p>\n\n\n\n<p><em>-No m\u00b4 importa, fai quello che vuoi<\/em><\/p>\n\n\n\n<p>(Hmm! Potrei fare una Tarta de Santiago con le mandorle, ho pensato. O forse una Torta Piemontese con le nocciole)<\/p>\n\n\n\n<p>\u2013 Cosa preferisci ti, nocciole o mandorle, l\u00b4 ho chiesto.<\/p>\n\n\n\n<p>&#8211;<em>Perch\u00e9 non usarli entrambi?<\/em><\/p>\n\n\n\n<p>-Che idea geniale!!!!<\/p>\n\n\n\n<p>La Torta di Santiago (Tarta de Santiago), \u00e8 un dolce tradizionale della cucina galiziana, originario, ovviamente, di Santiago de Compostela. \u00c8 composto principalmente da mandorle, zucchero e uova in proporzioni eguali e non contiene farina, n\u00e9 latticini (solo un po' di burro per ungere gli stampi, che pu\u00f2 essere perfettamente sostituito dall'olio vegetale), rendendolo perfetto per gli intolleranti. Ha un sapore di mandorle persistente e una consistenza granulosa e succosa, dovuta alla farina di mandorle, che trattiene l'umidit\u00e0.<\/p>\n\n\n\n<p>La Torta Piemontese (Torta Piemontese), \u00e8 pi\u00f9 o meno la stessa torta (in una delle sue numerose versioni), ma con le nocciole, al posto delle mandorle. Nella sua versione originale, \u00e8 fatto con le famigerate nocciole del Piemonte, le \u201cNocciole Trilobate Piemontesi\u201d, o \u201cTonda Gentile delle Langhe\u201d!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-1024x683.jpg\" alt=\"\" class=\"wp-image-6454\" srcset=\"https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-1024x683.jpg 1024w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-600x400.jpg 600w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-300x200.jpg 300w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-768x512.jpg 768w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-1536x1024.jpg 1536w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-18x12.jpg 18w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-1200x800.jpg 1200w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14-1568x1045.jpg 1568w, https:\/\/democraticgourmet.com\/wp-content\/uploads\/2022\/02\/Torta-piemontese-14.jpg 1773w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Quindi, per realizzare la nostra versione mista nocciola-mandorla, prima di tutto dobbiamo tostare leggermente la frutta per far risaltare oli e aromi e poi macinarli. Se non abbiamo mandorle pelate prima di tutto dobbiamo sbollentarle in acqua bollente per 1 minuto per rimuovere facilmente la loro buccia. Distribuiamo quindi mandorle e nocciole su 2 teglie e le tostiamo in forno a 170\u00b0C funzione statica per circa 13 \u2013 15 min, a seconda della loro dimensione, del livello di umidit\u00e0 iniziale e della freschezza. Appena sfornate le lasciamo raffreddare un po', poi strofiniamo delicatamente le nocciole tra i palmi delle mani per eliminare la loro buccia sottile.<\/p>\n\n\n\n<p>In un robot da cucina maciniamo MOLTO finemente 100 g di ciascuna frutta raffreddata ed in lotti, aggiungendo 1 cucchiaino di zucchero a entrambe (per attirare la loro umidit\u00e0). Quindi in una ciotola mescoliamo le due polveri-farine di frutta per unirle. Tritiamo grossolanamente i restanti 50 g di ogni frutta e conserviamo i pezzi grossi per la decorazione finale.<\/p>\n\n\n\n<p>Imburriamo molto bene una tortiera tonda e rivestiamo il fondo e i lati con carta da forno. Io, in questo caso ho utilizzato una tortiera di 22 cm di diametro X 3 cm di altezza. Dopo aver foderato la tortiera con la carta imburriamo nuovamente, facendo attenzione a non lasciare macchie senza lubrificante. Spolveriamo di farina di frutta dappertutto, arrotolando la forma per ricoprire bene tutta la superficie interna e buttando la farina in eccesso<\/p>\n\n\n\n<p>Separiamo i tuorli dagli albumi e dividiamo lo zucchero in \u00be e \u00bc. In una ciotola con una frusta a mano sbattiamo i tuorli con i \u00be dello zucchero e il sale, fino a renderli bianchi e spumosi. Aggiungiamo piano piano le \"farine\" di mandorle e nocciole. A questo punto il composto risulter\u00e0 sodo e asciutto.<\/p>\n\n\n\n<p>Nella planetaria montiamo gli albumi con un pizzico di cremore di tartaro a velocit\u00e0 medio-bassa fino a quando diventano spumosi. Aumentiamo la velocit\u00e0 a medio-alta e montiamo gli albumi per circa 1 minuto fino la consistenza di un \"becco d\u00b4 uccello\". Aggiungiamo gradualmente lo zucchero rimanente, continuando a montare, fino a quando non si formano picchi lucidi e rigidi (circa 2 minuti). Uniamo \u00bc degli albumi montati al composto di tuorli e frutta secca per alleggerirlo, e poi con una spatola incorporiamo delicatamente gli albumi rimanenti in tre lotti, facendo attenzione a non sgonfiarli.<\/p>\n\n\n\n<p>Versiamo delicatamente la pastella nella tortiera preparata e facciamo scorrere verticalmente una spatola o uno stuzzicadenti al suo interno per \u201crompere\u201d eventuali grosse sacche d'aria.<\/p>\n\n\n\n<p>Cuociamo sulla griglia medio bassa del forno preriscaldato a 175\u00baC (funzione statica) per circa 25 minuti, o fino a quando uno stuzzicadenti esce QUASI ma NON completamente pulito. Se la torta non \u00e8 pronta per quell'ora, spegniamo il forno e la lasciamo dentro per altri cinque minuti. <\/p>\n\n\n\n<p>SFORMIAMO IMMEDIATAMENTE la torta, altrimenti il vapore sottostante la sgonfier\u00e0. La poggiamo su una griglia e la lasciamo raffreddare completamente. Quando sar\u00e0 fredda, la spolveriamo con lo zucchero a velo e il composto di nocciole e mandorle tostate e tritate grossolanamente.<\/p>\n\n\n\n<p>Un'ultima cosa. Se volete usare una tortiera pi\u00f9 piccola o pi\u00f9 grande dovete rimuovere o aggiungere per ogni 2 cm di diametro un uovo e regolare rispettivamente la quantit\u00e0 degli altri ingredienti.
