{"id":3484,"date":"2026-03-02T20:27:30","date_gmt":"2026-03-02T19:27:30","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=3484"},"modified":"2026-03-03T20:29:22","modified_gmt":"2026-03-03T19:29:22","slug":"tagliatelle-alla-boscaiola","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/tagliatelle-alla-boscaiola\/","title":{"rendered":"tagliatelle alla boscaiola"},"content":{"rendered":"<h3 class=\"wp-block-heading has-text-align-center\" id=\"boscaiola-is-a-classic-italian-pasta-with-mushrooms\"><em>Boscaiola is a classic Italian pasta with mushrooms <\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"ingredients-for-4-servings-cost-about-4-pp\">ingredienti per 4 porzioni (costo circa 4 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sale<\/li>\n\n\n\n<li>500 g fresh pasta with eggs<\/li>\n\n\n\n<li>200 g yellow foot mushrooms<\/li>\n\n\n\n<li>60 g pancetta<\/li>\n\n\n\n<li>Olio di semi di girasole EV<\/li>\n\n\n\n<li>1 cipolla media<\/li>\n\n\n\n<li>60 g di burro<\/li>\n\n\n\n<li>Rosemary, cut in very tiny pieces <\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>Yesterday, during my everyday walk on the hills, I saw a plant of wild rosemary with very beautiful flowers. I cut some and I went to my mushroom seller. There I found yellow foot mushrooms, which are excellent for pasta. Right to home to prepare a boscaiola.<\/p>\n\n\n\n<p>Boscaiola, which means the forester\u00b4s one, is a pasta sauce made with mushrooms. Some cooks add tomato sauce, some other add cream (panna), some other use salsiccia (sausage). Usually I prepare this pasta dish without tomato and with pancetta instead of sausage. I never use cream, I think that gives to the dishes a muddy texture, I prefer &#8220;Saint Butter&#8221; instead of it. Parmigiano cheese is not obligatory for this sauce. This is today\u00b4s pasta dish.<\/p>\n\n\n\n<p>Iniziamo.<\/p>\n\n\n\n<p>First of all we prepare 500 grams fresh pasta with eggs, as we already have learnt, or as you can see <a href=\"https:\/\/democraticgourmet.com\/it\/the-encyclopaedia-of-fresh-pasta\/\" target=\"_blank\" rel=\"noreferrer noopener\">qui<\/a>. We cut it to tagliatelle with a knife or the machine.<\/p>\n\n\n\n<p>In a cold pan we add the pancetta, cut in thin slices. We bring to a gentle heat aiming to extract fat from the pancetta. When done we remove the solid parts, we cut them in pieces and we set them aside.<\/p>\n\n\n\n<p>In the same pan we soften the onion. We first cut it in dice and we then gently fry it, adding some water, if required. We want to produce &#8220;a cream&#8221;, where the onions will be very very soft. We add some salt.     <\/p>\n\n\n\n<p>We clean the mushrooms very well and we discard their dirty bottoms. We preheat very well a wok with a little bit of EV sunflower oil and we saut\u00e9 them in two batches for about 3-4 minutes till tender. To achieve this result we have to continuously move the saut\u00e9 pan in order to create an homogeneous cooking. We salt them at the very last moment of saut\u00e9ing.
