{"id":3116,"date":"2022-02-12T13:07:55","date_gmt":"2022-02-12T11:07:55","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=3116"},"modified":"2022-02-12T13:53:53","modified_gmt":"2022-02-12T11:53:53","slug":"kid-chops-with-bulgur-and-plum-sauce","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/kid-chops-with-bulgur-and-plum-sauce\/","title":{"rendered":"costolette di capretto con bulgur e salsa di prugne"},"content":{"rendered":"<h3 class=\"has-text-align-center wp-block-heading\" id=\"today-we-try-a-slow-cooking-for-the-kid-chops-to-provoke-a-very-tender-and-moist-result\"><em>Oggi proviamo una cottura lenta per le costolette di capretto per provocare un risultato molto tenero e umido<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"ingredients-for-4-servings-cost-about-5-pp\">ingredienti per 4 porzioni (costo circa 5\u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>I kg costolette di capretto<\/li><li>200 g bulgur<\/li><li>una cipolla piccola <\/li><li>1 litro di brodo vegetale<\/li><li>1 jar plum jam with no added sugar (better organic)<\/li><li>pepe nero macinato<\/li><li>scorza e succo di 1 limone<\/li><li>sale<\/li><li>Olio di semi di girasole EV<\/li><li>semi e fiori di finocchio selvatico<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>Adoro il capretto, \u00e8 di gran lunga la mia carne preferita, perch\u00e9 \u00e8 sana e molto gustosa allo stesso tempo. E di solito nostrana. L'unico \u201cproblema\u201d del capretto \u00e8 che contiene pochi grassi, circa 3 volte meno di quelli dell'agnello!!! Questa propriet\u00e0 porta i cuochi a preparare il capretto in ambienti umidi o oleosi, in modo da tenerlo tenero e renderlo. \u00c8 molto caratteristico che in Spagna impanano il capretto (soprattutto le braciole) e lo friggono in abbondante olio.<\/p>\n\n\n\n<p>Ho scelto un modo completamente diverso. Ho cotto le costolette a bassa temperatura in un bagno sottovuoto. Le ho accompagnate con il bulgur, un cereale molto diffuso nelle cucine del Mediterraneo orientale e nordafricano. Una semplice salsa con marmellata di prugne fatta a casa e limone, oltre a semi di finocchio e fiori completano il piatto. <\/p>\n\n\n\n<p>Per prima cosa saliamo le costolette. Le mettiamo in sacchetti sottovuoto, togliamo completamente l'aria e li sigilliamo. Regoliamo la temperatura a 58 gradi Celsius e cuociamo le costolette per 2-3 ore in un bagno sous vide. Trascorso questo tempo possiamo procedere subito al nostro piatto oppure possiamo mettere il sacchetto con la carne in frigo per finirlo in seguito oppure un altro giorno. <\/p>\n\n\n\n<p>Se non abbiamo un roner, adagiamo le costolette di capretto su una griglia, mettiamo la griglia in una teglia, copriamo con un foglio di alluminio e le arrostiamo per circa 60-80 minuti a 150 \u00b0C. Non dimentichiamo di aggiungere un po' d'acqua nella teglia, quale, trasformandosi in vapore, render\u00e0 tenera la carne. <\/p>\n\n\n\n<p>Poco prima di mangiare, tritiamo la cipolla e la facciamo soffriggere in 2 cucchiai di olio, facendo attenzione a non bruciarla. Aggiungiamo il bulgur e quando sar\u00e0 dorato, versiamo 500 ml di brodo vegetale, mettiamo il coperchio e abbassiamo la temperatura al minimo. Non posso darvi la quantit\u00e0 esatta di brodo necessaria, poich\u00e9 esistono molte variet\u00e0 di bulgur, che richiedono una quantit\u00e0 diversa di liquido. I grani integrali richiedono molto di pi\u00f9, \u00e8 meglio controllare il bulgur ogni 5 minuti per verificare l'evoluzione della sua cottura. Quindi, iniziamo con 500 ml e, se ne abbiamo bisogno di pi\u00f9, l\u00b4 aggiungiamo pi\u00f9 tardi. Vi ricordo che il brodo deve essere sempre molto caldo. <\/p>\n\n\n\n<p>Nel frattempo prepariamo la salsa. Vi ho suggerito di scegliere una marmellata biologica, perch\u00e9 queste confetture non hanno zuccheri aggiunti o hanno una proporzione molto bassa. A proposito, usate prodotti biologici quando potete, la mia dieta \u00e8 quasi al 100% biologica.<\/p>\n\n\n\n<p>Mescoliamo la marmellata con 2 cucchiai di olio di semi di girasole EV, un po' di succo di limone (controlliamo con la lingua), la scorza di limone e un po' di sale. Schiacciamo al pestello dei grani di pepe e dei semi di finocchio e li aggiungiamo alla salsa. La salsa di prugne non deve essere n\u00e9 troppo densa, n\u00e9 troppo acquosa, ovviamente cerchiamo la consistenza di una salsa comune. Quindi, se la salsa risulta troppo densa, la diluiamo con acqua. In ogni caso, portiamo la salsa a temperatura abbastanza calda.<\/p>\n\n\n\n<p>Asciughiamo le costolette e le facciamo rosolare per 1-2 minuti in una padella molto calda. <\/p>\n\n\n\n<p>Mettiamo nei piatti il bulgur, le costolette e la salsa e decoriamo con i fiori di finocchio. Durante la primavera e l'autunno \u00e8 molto facile trovarli in quasi tutti i campi.
