{"id":3010,"date":"2022-05-18T14:30:02","date_gmt":"2022-05-18T12:30:02","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=3010"},"modified":"2022-05-18T14:30:03","modified_gmt":"2022-05-18T12:30:03","slug":"cold-tomato-soup-with-burnt-garlic-and-rosemary-flowers","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/cold-tomato-soup-with-burnt-garlic-and-rosemary-flowers\/","title":{"rendered":"Zuppa fredda di pomodoro con \u201caglio bruciato\u201d e fiori di rosmarino"},"content":{"rendered":"<p><\/p>\n\n\n\n<h3 class=\"has-text-align-center wp-block-heading\"><em>Una zuppa freda per le calde notti estive<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 2 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>250 g di pane raffermo tagliato a fette<\/li><li>1lt di acqua fredda (minerale o filtrata)<\/li><li>Sale<\/li><li>4 spicchi d'aglio medi<\/li><li>1 cucchiaio pieno di doppio concentrato di pomodoro <\/li><li>2-4 cucchiai di aceto di prima qualit\u00e0<\/li><li>100 ml di olio d'oliva EV<\/li><li>Fiori di rosmarino<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>L'\u201daglio bruciato\u201d \u00e8 una tecnica molto semplice della cucina catalana, che si utilizza spesso nei piatti a base di pesce. <\/p>\n\n\n\n<p>Abbiamo gi\u00e0 imparato che possiamo prepararlo, tagliando gli spicchi d'aglio a fettine (non troppo sottili) e friggendoli \u2013 sempre partendo da una padella fredda \u2013 a temperature molto basse, fino al colore beige, ma non marrone scuro.    <\/p>\n\n\n\n<p>Quindi, per preparare questa zuppa, prima dobbiamo grigliare il pane. <\/p>\n\n\n\n<p>Lo lasciamo raffreddare e lo tritiamo finemente a piccole briciole. Mettiamo le briciole in acqua e le lasciamo in ammollo per almeno 6 ore, DENTRO IL FRIGORIFERO. <\/p>\n\n\n\n<p>Nel frattempo prepariamo l'\u201daglio bruciato\u201d, facendo soffriggere delicatamente gli spicchi, tagliati a fettine, nell'olio d'oliva EV, come descritto sopra.<\/p>\n\n\n\n<p>Trascorso il tempo di ammollo, aggiungiamo l'aceto, il concentrato di pomodoro, l'olio all'aglio dalla padella e una mica di sale. Mescoliamo bene, passiamo al setaccio (non fino, la zuppa deve essere spessa) e mettiamo la nostra zuppa in frigo, fino al momento di servire.
