{"id":2768,"date":"2021-10-27T19:13:50","date_gmt":"2021-10-27T16:13:50","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=2768"},"modified":"2021-11-02T16:46:15","modified_gmt":"2021-11-02T14:46:15","slug":"hokkaido-squash-with-iberian-ham-and-fried-egg","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/hokkaido-squash-with-iberian-ham-and-fried-egg\/","title":{"rendered":"zucca hokkaido con prosciutto iberico e uovo fritto"},"content":{"rendered":"<h3 class=\"has-text-align-center wp-block-heading\"><em>Non preoccuparvi, non c'\u00e8 niente di giapponese qui<\/em>,<em> \u00e8 solo il nome della verdura<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 4 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li>2 piccole zucche hokkaido (o red kurri)  <\/li><li>4 fette di prosciutto iberico <\/li><li>4 uova grandi, naturalmente bio <\/li><li>4 cucchiaini di parmigiano grattugiato <\/li><li>Olio di semi di girasole EV<\/li><li>Briciole di pane<\/li><li>Rosmarino fresco<\/li><li>Sale<\/li><li>pepe nero macinato<\/li><\/ul>\n\n\n\n<hr class=\"wp-block-separator\"\/>\n\n\n\n<p>La tecnologia sotto vuoto non viene utilizzata solo per la preparazione di piatti di carne. Confezionando gli alimenti sottovuoto possiamo mantenerli pi\u00f9 a lungo in frigorifero e preparare ottimi piatti in poco tempo.<\/p>\n\n\n\n<p>Quindi, la domenica, facciamo le preparazioni della settimana, le sigilliamo sottovuoto, mettiamo in frigo e consumiamo il cibo durante i prossimi 7 giorni!!!!<\/p>\n\n\n\n<p>Possiamo seguire questa pianificazione anche se non abbiamo un fornello di precisione, ma una macchina sottovuoto \u00e8 indispensabile.<\/p>\n\n\n\n<p>Le zucche sono le pi\u00f9 belle di tutte le verdure. Ricordando il radicchio di Castelfranco, correggo: le zucche sono tra le verdure pi\u00f9 belle. Bianca, gialla, pallida, arancione, quanti colori possono avere!!!! <\/p>\n\n\n\n<p>Sono anche economiche e non hanno nemmeno bisogno di un frigorifero!!!!! Solo un bel posto in garage. <\/p>\n\n\n\n<p>Quindi compriamo due piccole zucche, le sbucciamo, le tagliamo a met\u00e0, le saliamo leggermente, le chiudiamo in un sacchetto sottovuoto e la domenica (o il nostro giorno di riposo) le cuociamo per circa 2 ore a 85 gradi. Trascorso questo tempo controlliamo con il dito se le zucche sembrano cotte, perch\u00e9 ci sono alcune variet\u00e0 piuttosto dure. Se non disponiamo di un fornello di precisione arrostiamo le mezze zucchine in forno (180\u00b0C) finch\u00e9 sono tenere ma sode, le lasciamo raffreddare completamente e le chiudiamo sottovuoto. In entrambi i casi, mettiamo le confezioni in frigorifero.<\/p>\n\n\n\n<p>Quando vogliamo mangiare le zucche, mettiamo le fette di prosciutto iberico in una padella fredda e le facciamo soffriggere fino a renderle leggermente croccanti. <\/p>\n\n\n\n<p>Togliamo le parti solide, alziamo la fiamma e nel grasso di prosciutto \"bruciamo\" con attenzione la parte tagliata delle zucchine. 1 minuto basta. Ho dimenticato di dire che prima dobbiamo portarle a temperatura ambiente. Le teniamo caldi.<\/p>\n\n\n\n<p>Friggiamo 4 uova, uno alla volta, cercando di mantenere il tuorlo completamente liquido.
