{"id":1690,"date":"2021-03-16T19:01:17","date_gmt":"2021-03-16T17:01:17","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=1690"},"modified":"2026-03-07T16:27:29","modified_gmt":"2026-03-07T15:27:29","slug":"gatto-di-patate-with-porcini-mushrooms","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/gatto-di-patate-with-porcini-mushrooms\/","title":{"rendered":"\u201cgatt\u00f3 di patate\u201d with porcini mushrooms"},"content":{"rendered":"<h3 class=\"wp-block-heading has-text-align-center\"><em>Neapolitan proverb: \u201cFour things make you happy: woman, money, sleep and food\u201d<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 5 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sale<\/li>\n\n\n\n<li>900 g potatoes<\/li>\n\n\n\n<li>200 g Italian mozzarella in brine<\/li>\n\n\n\n<li>100 ml di latte<\/li>\n\n\n\n<li>80 g parmigiano or grana cheese<\/li>\n\n\n\n<li>100 g prosciutto crudo or cotto<\/li>\n\n\n\n<li>3 eggs<\/li>\n\n\n\n<li>Olio d\u00b4 oliva EV<\/li>\n\n\n\n<li>200 g di funghi porcini freschi<\/li>\n\n\n\n<li>40 g bread crumbs<\/li>\n\n\n\n<li>Pepe rosa<\/li>\n\n\n\n<li>Fresh basil<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>One of the most typical Neapolitan dishes is the gatt\u00f3 di patate, the &#8220;potato cake&#8221;, a very simple dish made in aim to enrich the starchy and monotonous boiled potato.<\/p>\n\n\n\n<p>To make the potato cake, which, of course, is not sweet but &#8230;&#8230;. savory, we first boil the potatoes in plenty of salted water.<\/p>\n\n\n\n<p>The potatoes should be boiled well with their skins and then dissolved in pur\u00e9e. In this dish the homogenity of the pur\u00e9e does not matter (as in gnocchi or souffl\u00e9, for example), so we do not have to pass the potatoes through the chinois. Actually, I think that if we just smash the potatoes with a ladle the gatt\u00f3 will come out even better.<\/p>\n\n\n\n<p>When the potatoes are done, we turn them into a puree and we preheat the oven to 190o C.<\/p>\n\n\n\n<p>While the puree is still hot, we add the oil, 60 g of the parmesan, the beaten eggs, the milk, as well as a little salt, if we find the mass untasteful. We stir until the mixture turns relatively homogenous, being careful not to over-do with stirring in order to avoid that our gatt\u00f3 becomes chewy.<\/p>\n\n\n\n<p>We grease a baking sheet and we add some ground bread crumbs to prevent the pur\u00e9e from sticking.<\/p>\n\n\n\n<p>We pour half the amount of the pur\u00e9e on the sheet, then the mozzarella in slices and the prosciutto and finally the rest of the pur\u00e9e, garnishing the top of the gatt\u00f3 with the bread crumbs and the parmesan.<\/p>\n\n\n\n<p>We put the gatt\u00f3 in the oven and we let it bake for about 35 mins.<\/p>\n\n\n\n<p>Meanwhile, we saut\u00e9 the porcini mushrooms (not salting them in advance, but only when are almost done) till tender.
