Non ha troppe spine ma una polpa succosa e tenera. Il San Pietro richiede una cottura veloce e delicata per mantenersi tenero e gradevole. \u00c8 un vero peccato distruggere un pesce caro con una cottura prolungata.<\/p>\n\n\n\n<p>E' chiaro che se non trovate il San Pietro potete usare altri pesci di taglia media, come saraghi, trote, branzini ecc.<\/p>\n\n\n\n<p>Ma prima di tutto dobbiamo preparare le verdure.<\/p>\n\n\n\n<p>Portiamo a bollore dell'acqua salata e iniziamo a lessare il broccolo tagliato a cime per circa 4 minuti e le zucchine tagliate a dadini per circa lo stesso tempo. Quando le verdure sono pronte le mettiamo in una ciotola con abbondante acqua fredda per fermarne la cottura e conservare vivo il loro colore verde.<\/p>\n\n\n\n<p>Nella stessa acqua di cottura aggiungiamo il succo di due limoni e mettiamo a cuocere il finocchio, tagliato a fette per circa 6 minuti, il cavolfiore, tagliato a cime, per circa 3 minuti e la carota, tagliata a pezzi obliqui, per circa 4 minuti. Vi ricordo che dobbiamo portare l'acqua ad ebollizione e subito dopo abbassare la fiamma e far sobbollire le patate. <\/p>\n\n\n\n<p>Preriscaldiamo il nostro forno a 180 gradi. In due teglie mettiamo 2 griglie, unte d'olio. Li mettiamo in forno per circa 10 minuti e quando sono abbastanza calde mettiamo sopra i pesci. Inforniamo per circa 10 minuti e aggiungiamo le verdure, condite con olio. Continuiamo la cottura per altri 5 minuti.<\/p>\n\n\n\n<p>Nel frattempo prepariamo la salsa. In una piccola ciotola aggiungiamo il succo e la scorza di un limone, 120 ml di olio d'oliva, la senape, lo zafferano, il sale e il pepe. Mescoliamo con il frullatore ad immersione per circa 20 secondi, fino a creare una salsa leggera.<\/p>\n\n\n\n<p>Quando i pesci sono pronti, li tagliamo in 4 filetti, eliminando accuratamente tutte le spine.
