{"id":10477,"date":"2022-12-15T11:48:55","date_gmt":"2022-12-15T10:48:55","guid":{"rendered":"https:\/\/democraticgourmet.com\/?p=10477"},"modified":"2026-02-25T18:46:18","modified_gmt":"2026-02-25T17:46:18","slug":"linguine-with-small-scampi-vodka-fresh-tomato-and-thyme","status":"publish","type":"post","link":"https:\/\/democraticgourmet.com\/it\/linguine-with-small-scampi-vodka-fresh-tomato-and-thyme\/","title":{"rendered":"linguine agli scampi, vodka, pomodoro fresco e timo"},"content":{"rendered":"<h3 class=\"wp-block-heading has-text-align-center\"><em>Un altro primo piatto natalizio dall'aspetto lussuoso, ma non costoso<\/em><\/h3>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h5 class=\"wp-block-heading\">ingredienti per 4 porzioni (costo circa 6 \u20ac ap)<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>sale<\/li>\n\n\n\n<li>500 gr scampi piccoli<\/li>\n\n\n\n<li>1 grosso pomodoro maturo<\/li>\n\n\n\n<li>1\/2 peperoncino<\/li>\n\n\n\n<li>1 spicchio d'aglio<\/li>\n\n\n\n<li>40 ml di vodka<\/li>\n\n\n\n<li>320 g linguine<\/li>\n\n\n\n<li>Olio d\u00b4 oliva EV<\/li>\n\n\n\n<li>timo fresco<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<p>Le persone che vivono in un paese mediterraneo hanno la possibilit\u00e0 di preparare piatti eccellenti e dall'aspetto lussuoso senza spendere molti soldi. Cos\u00ec, ieri ho trovato piccoli scampi, freschissimi ed economici con solo 14E al kg. Mezzo chilo \u00e8 sufficiente per 4 fantastici primi piatti, un'alternativa pi\u00f9 economica degli spaghetti alle vongole e un'allettante proposta anche per il cenone della vigilia di Natale napoletano.<\/p>\n\n\n\n<p>Il \u201csegreto\u201d di questo piatto \u00e8 creare un brodo facile e veloce, che arricchir\u00e0 i profumi del piatto. Quindi, dopo aver lavato bene gli scampi, ne prendiamo 100 gr e li facciamo polma con il frullatore o il pestello. <\/p>\n\n\n\n<p>In una piccola padella mettiamo un cucchiaio di olio d'oliva, il peperoncino, la vodka, lo spicchio d'aglio, gli scampi sciolti e 100 ml di acqua. Portiamo a ebollizione, abbassiamo la fiamma e lasciamo sobbollire per circa 20 minuti. Aspettiamo altri 20 minuti e li passiamo al setaccio fine tenendo il brodo e scartando le parti solide.<\/p>\n\n\n\n<p>In un wok o in una padella capiente mettiamo un po' di olio d'oliva, il brodo e il pomodoro fresco, sbucciato, privato dei semi e tagliato a dadini. Aggiungiamo e controlliamo il sale e lasciamo cuocere circa 10 min.<\/p>\n\n\n\n<p>Nel frattempo in una pentola portiamo ad ebollizione dell'acqua salata e poi aggiungiamo le linguine. Mescoliamo, perch\u00e9 le linguine tendono ad attaccarsi e le lasciamo lessare al dente, 1 minuto in meno del tempo scritto sulla confezione. 3 minuti prima della fine aggiungiamo i restanti 400 gr di scampi<\/p>\n\n\n\n<p>Li scoliamo e li trasferiamo nel wok con il pomodoro e il brodo.
